Sydney 'aint exactly cheap for hotels, so you'll need to trawl all the usual suspects like Sheraton, Westin, Hilton, Marriott, Intercontinental group as well as some local chains like Quest Apartments, Medina and Flag Choice to see what you can find.
Getting out of Oz in November is historically easy - it's one of our low seasons, the lull before the summer vacation exodus, so UA or QF nonstop to LAX or SFO should be easy enough. Between the 2 of them you'll have at least 6 flights per day SYD-LAX/SFO nonstop.
AC fly daily to HNL en-route to YVR and it should be very easy to get to HNL with them in early November. Although HNL onwards from Mid-November is horrendous as there are a lot of U.S. service personnel trying to get back to the mainland any way possible for Thanksgiving and when the U.S. carriers fill, they use AC via YVR to get back Stateside. HA fly SYD-HNL 4 x weekly so they are another option for you, although again mid-Nov exodus from HNL to the mainland will be in play so you need to consider that as well.
Am not sure what agreements DL has for retirees, but NZ can get you back to LAX/SFO via AKL as well.
