Hi we willo be in BKK around Aug 21 and need to fly standby to HKG using ZED fares to get a flight back to Canada. Can anyone let us know what the loads are usually like at this time of year?

As long as your ZED is a non-Star specific one I don't think you'll have a problem at all. TG & CX both run 5 widebodies a day each and there are other numerous carriers operating over the route each day - GF AI EK UL KQ KA and CI.
Just make sure your ZED covers as many of those carriers as possible - including Kenya Airways! Their 767 service nearly always has seats available on it and they run a very, very good operation. Certainly worth it for the novelty value if nothing else !!
Don't rely on the Star ZED as that limit's you to just 5 of these flights only.

If you have ZED agreements with these carriers at both the ZM and ZH levels then its worth getting 2 tickets, one at each level, so that if you end up travelling on a ZM carrier you are not wasting the additional cost that is charged for the ZH fare.
