As you've not had anything from Peter I thought I'd put in my tuppence worth.
I can't give you any info about connx via Frankfurt however numerically LHR is a far better option. There are at least 6 flights a day to DXB and also several to AUh ( Abu Dhabi ) which is only an hour or so drive from DXB ( an easy drive on good roads ). A lot depends upon who you have arrangements with .. as AC I assume your best deals are with STAR but none of those carriers fly from LHR so it would probably be a ZED/ID90 on BA, EK or VS ( depends which is best value ). If the flights YYZ-LHR are iffy you might also consider YYZ-MAN and then MAN-DXB on EK.
