In the last year i have been to manila twice.... once during holy week in april and once in ealry nov. Are you able to get passes in first class? If so i would advise you to do that. Coach from mnl-nrt is usually oversold. And when i say oversold i dont mean by 1 or 2. Its usually oversold by 30 or 40.

If you cant get First class tickets I would take the mnl-ngo-dtw or mnl-ngo-nrt-to the west coast. MNL-NGO-NRT is usually open whenever i check.

I usually get backups on JL just in case MNL-NRT. I dont know what pass agreements you have but see if you can get some sort of backup.

And also to get to NRT, PDX and SFO usually have the most open seats. Sea and Lax always goes out full it seems.
