I went to Prague & Vienna in early December a few years ago. Really enjoyed the Christmas markets in Vienna.

I've also been to the Costa del Sol in Spain January. No crowds and temps were mild but not warm enough to lay out on the beach. We tried to take a day trip to Morocco by boat but the waters were too rough the day we went and our ferry was cancelled.
